Chef Massimo Fedozzi, is a graduate of the Marco Polo Culinary Institute of Genova, Italy. While growing up in Northern Italy, Fedozzi was intimately involved with food from a young age. He learned about pasta and antipasti at his parents’ salumi shops in Genova and delighted in the meals and aromas while his family gathered around the kitchen table. Fluent in English, Italian and Spanish, he was expected to become a translator, but followed his true passion and attended the Marco Polo Culinary Institute in Genova. Fedozzi’s career began in the kitchens of some of Europe’s most renowned establishments including: The Savoy Hotel in London, England; Le Chantecler at the Hotel Le Negresco in Nice, France and Grand The Hotel Park in Gstaad, Switzerland. At Ristorante Aladino in Genova, following the step of his mentor Gualtiero Marchesi, Fedozzi became one of the first chefs in Italy to present nouvelle cuisine and the youngest Italian Executive Chef. He strives to share his enthusiasm for taste and presentation and lives by the philosophy that “THE QUALITY OF INGREDIENTS IS EVERYTHING AND SIMPLICITY OF EXECUTION IS A MUST”.

With roots in the deep south, Chef Burnette began his career in the kitchen at age 15 making pizzas and sandwiches in his hometown of Richmond,VA. Over the next several years, while pursuing other interests, Chef Burnette continually found himself back in the restaurant industry, following a similar pattern that would begin in the front of the house and end in the kitchen.
Jobs with national chains both in the south (Battleground Restaurant Group) and in his adopted home of New York City (Bubba Gump Shrimp Co., Dave and Buster’s) lead to experience in every position in the restaurant as well as trainer positions that allowed him to open over 20 restaurants. After four years, he was recruited to be the General Manager at the Cobalt Room and subsequently some of New York’s other finest lounges including Bar and Books, The Carnegie Club and Galapagos Art Space.

Rodrigo is a Michelin-trained chef who has worked with some of the biggest names in the culinary world, including Joan Roca from El Celler de Can Roca (twice No. 1 restaurant in the world – “The World’s 50 Best” – 3 Michelin Stars), Gaggan Anand from Gaggan (four consecutive times No. 1 restaurant in Asia – “Asia’s 50 Best” – 2 Michelin Stars), and Michael Anthony from the prestigious Michelin stared Gramercy Tavern. He graduated with distinction and top of his class from the International Culinary Center (ICC) in NYC (founded as the French Culinary Institute). ICC alumni have received over 150 Michelin stars.
Inspired by his Latin background and fascination for Asian cuisines, several of his dishes fuse ingredients and techniques from these gastronomic cultures, like his cured king salmon crudo with chipotle ponzu and crispy capers. He also loves preparing classic (European) dishes, often with a fresh twist, like his seared scallops with yuzu-white truffle hollandaise.

Born on a family farm on the Adriatic coast of Montenegro, I grew up around farm fresh ingredients and learned from an early age how to best prepare foods that have been freshly harvested by our local family of farmers and butchers. After leaving Montenegro during the Balkan Wars, my family moved to the North Fork of Long Island where I spent my Summers working in the Long Island agriculture industry and eventually went on to operate my own 3 acre farm where I developed a successful model for biointensive sustainable farming. I learned how to cook professionally in my family’s restaurants and for the last 10 yrs have been providing high level personal chef services while overseeing my own restaurant. Through my relationships with local farmers, harvesters, and fisherman I am fortunate to be able to procure the very best of the best in local ingredients. I am originally from Moscow, and relocated to New York at a young age. While in NYC, I worked under Daniel Bouloud. I spent my 20s living, eating and cooking in Paris. Always inspired by Japan, I headed to Tokyo where I worked with Zaiyu Hasegawa at DEN, a two Michelin star restaurant which was named TOP 50 Best Restaurants in Asia. My biggest mentor was Pascal Aussignac, who I had the pleasure of working with in his Michelin star restaurant Club Gascon in London. Additionally, I have 10 years of private chef experience, collaborations and food styling. I offer private plated dinners, small/large gatherings. I work with locally-sourced, organic ingredients and have experience cooking with vegan, vegetarian, and kosher dietary restrictions as I used to live in Israel in my early 20s. I have knowledge of Asian, Mediterranean, and French cuisines as well as a wide-range of pastry making. I am able to travel in New York area, along with the occasional longer distance travel.

Food had an early impact on my life. My fondest childhood memories include watching Food Network with my mom and seeing my dad slow cook Sunday dinners — nothing like smoked ribs on a summer’s day! My appreciation for all things culinary, led me to begin working in restaurants at the age of 18 and I immediately felt at home. I continued to work my way through the industry and have now spent the last 8 years running kitchens in your favorite NYC restaurants.
I realized I had a particular fondness for private catering when I started dating my wife. Together, we cooked dinner for her family every Friday; It was our thing. Inspired by the intimacy of the process, my ability to be creative with recipes and presentation and most of all, the way a great meal punctuates an unforgettable evening; I developed a desire to share this experience with others.
