Hello and happy 2023. I love cooking exciting food and the Fusion of it. In fact I love it all and have put together a playful meal with a variety of Fusion. So it's a bit Mediterranean, definitely French and Caribbean. My team is vaccinated and have had booster shots. Willing to make menu adjustments. You requested Branzino or Black Bass, neither of which would stand up to the Jerk Seasoning. The White Fish that Best stands up to Jerk is Red Snapper, which is quite expensive. Salmon works beautifully because of it's natural oil content. I suggest you add a server because you are 9 individuals for ease of service.
