mixed baby greens, walnuts, blackberries, crispy shallots, EVOO-meyer lemon citronette

3rd course

Butternut Squash Ravioli
yolk-only fresh pasta, cambozola, brown-butter, sage, walnuts, asian pear

4th course

Sublime Slow 'n Low Roasted Chicken Breasts
marinated 48-hours in secret herb mix, brushed with balsamic brown-butter, jus reduction, potato purée, and roasted asparagus

5th course (choose one)

Mascarpone Cheesecake
pistachio "ceiling", mixed berries, raspberry coulis

Valrhona Chocolate Soufflée
tahitian vanilla crème anglaise, berries

Tarta de Santiago
moist and gooey almond cake, vanilla ice-cream, raspberries

Hi Reiner, this is a really amazing menu, but I am more than happy to satisfy any cravings you might have. 30+ years of serious cooks have made me pretty flexible and versatile.
