Hi Allan, I would LOVE to cook this meal for you, your wife, kids and family/guests. I am your guy. Actually, my wife is Mexican, we were married in Oaxaca (Mexican capital of mole), and I am a michelin-trained chef with a passion for Mexican food, so I would love to provide an elevated Mexican dinner for your wife.
This is what I propose:
Appetizers (two different ceviches):
White Fish Ceviche (whatever is appropriate and freshest at the market)
cilantro-lime "leche de tigre", coconut milk, avocado, heirloom tomato, fried leeks
Asian Fusion Yellow Fin Tuna Ceviche
avocado, watermelon, sesame dashi-soy marinade, black quinoa pop
Main Course (choose chicken or beef, or I would even do both if you want)

chicken breast marinated 48-hours in special herb rub
Carne con Dos Moles
sous-vide perfect beef tenderloin roast
cooked to desired doneness, seared to perfection

7 different dry peppers - very spicy

chocolate & dry peppers - mild
Mole Negro
black chillies and pasilla - spicy

green chillies and jalapeños

a blend of pine nuts and other nuts - mild
