yuzu white truffle hollandaise, maldon salt

2nd course

Butternut Squash Ravioli
yolk-only fresh pasta, cambozola, brown-butter, sage, walnuts, asian pear, parmigiano reggiano

3rd course

Charred Octopus
cilantro aioli, crispy prosciutto, roasted potatoes

4th course

Sous-vide Perfect Beef Tenderloin
cooked to desired temperature, seared to perfection, sauce options: à la moutard, au poivre, bearnaise, soy ginger-garlic jus, chimichurri, potato purée and roasted asparagus
