I would love to give you and your friends this class! Brunch is my favorite meal, and Eggs Benedict happen to be one of my favorite dishes and one of my specialties. I also have a knack for simplifying "challenging" dishes/executions. What I propose to teach you is the following:

Smoked Salmon Eggs Benedict
on toasted brioche, with Russ & Daughters smoked salmon, poached eggs & yuzu-white truffle hollandaise

Note: we can do the traditional hollandaise, though I think this is a wonderful variation. Yuzu is a Japanese citrus with a terrific aroma that provides a delicious alternative to lemon. Also, I can teach you a much easier way of doing the hollandaise directly on the stove, which is much easier than the old-fashioned bain-marie technique.

Arugula Salad
honey-dijon citronnete, shaved parmigiano-regianno

Chocolate Soufflé
crème anglaise, berries

Note: chocolate soufflé is also one of those desserts that seem to be perceived as a daunting undertaking, but with a couple of simple key tips, I will show you this is actually a breeze. You ladies will be able to wow your future guests and learn tricks are are normally only known to few professional chefs :-)
