Hi Jackie, I would love to cook this dinner for you guys. Since you already have a pretty good idea of what you'd like, below are some of my customers'/family's favorite dishes in those categories. Happy to discuss the menu further if there are any changes you'd like to make:

Appetizer (choose one):



Fresh Caprese Salad
vine-ripe tomatoes, fresh buffalo mozzarella, pistachio-basil pesto, balsamic glaze, award-winning picual EVOO, black pepper, smoked maldon salt

Note: we can also use fresh burrata if you prefer

Sous-Vide Shrimp Cocktail
shrimp infused with bay leaves and lemon peel, san marzanos, red onion, celery, avocado, lime cilantro

Note: we can also go more classic, with cocktail sauce and horseradish if that's what you have in mind



2nd-Course: Pasta (choose one)

Tagliatelle Carbonara
egg pasta, guanciale, pecorino romano, parmigiano reggiano, perfect sous-vide egg yolk, black pepper

Papardelle Alfredo
egg pasta, organic cream, parmigiano reggiano, black pepper

Fettuccine Puttanesca
egg pasta ,san marzano tomatoes, white wine, capers, kalamata olives, anchovies, EVOO, fresh basil, parmigiano reggiano

Spaghetti al Pesto di Pistacchi
egg pasta, pistachio pesto, parmigiano reggiano, black pepper

Note: I can also go more traditional with a pine nuts pesto, but I really love the pistachio variation



Main Course (choose one):

Sublime Slow 'n Low Roasted Chicken Breasts
marinated 48-hours in herb mix, brushed with balsamic brown-butter, jus reduction

Sous-vide Bistecca alla Fiorentina
porterhouse steak for two, picual EVOO

Sous-vide Perfect Beef Tenderloin
Cooked to desired doneness, seared to perfection – sauce options: au poivre (pepper sauce), à la moutarde (creamy mustard), béarnaise, soy-ginger jus, chimichurri

Roasted Asparagus
Potato Purée
Haricot Vert with EVOO & Toasted Almonds
Cauliflower Purée
Sautéed Mushrooms with Garlic and White Wine
