Shrimp and Crabmeat CreoleI was raised in a southern Louisiana food family and worked in our restaurants and food service outlets for several years before going to college and continuing my culinary education and experience in Baton Rouge, Louisiana.
Later I moved to Los Angeles and opened two restaurants, one an American Italian cafe in downtown LA and the other in Santa Monica known as The Alligator, a full service Cajun Americana restaurant that served boiled crawfish, seafood gumbo, chicken & sausage gumbo, jambalaya, shrimp creole, Po-boys, crawfish etouffee, dirty rice, blackened red snapper, ribeye steaks, Cajun / Italian dishes, and many other Cajun and Americana dishes.
Over the years I have worked with several Louisiana chefs and have developed various Cajun, Italian, and Americana dish recipes based upon the original family recipes I learned as a child and a young man; and include these in my menu.
