Red Wine Braised Short RibsI feel like I really need to tell my story, so here it goes!
I was born in Port-au-Prince Haiti on January 3rd, 1984. I grew up watching my mom, my grandmother and aunt cook. By the age of 10, I was hooked! When I moved to America as a teenager, I got my first job as a cook at Sbarro, a pizzeria and pasta restaurant. That experience further developed my appetite for cooking. See what I did there? Soon later, I enrolled in culinary school at Le Cordon Bleu. I am proud to say that graduated with honors and my career as a chef became real. I was fortunate to gain incredible experience at Disney World, then in Atlantic City where I worked at Borgata, a -star resort hotel. There, I was assigned to the VIP section where I excelled. I was fortunate to cater to our VIP guests by preparing some of my most delicious meals. I truly cherished my years of service at Borgata where I had the chance to meet with many celebrity Chefs such as Wolfgang Puck, Bobby Flay, Michael Mina just to name a few, with whom I shared many recipes and techniques.
For some reason, I decided to move back to Florida to start fresh! And very early into this new chapter in my life, I felt like I had made a huge mistake by quitting my corporate sous-chef position in Atlantic City. I know what you are thinking, we could just end the story here because it’s obviously not the biggest mistake of my life. But just for fun and for you to know how passionate I am about what I do, let me continue!
