I hope that this note finds you well. I would like to submit a proposal for your forthcoming event on Monday 3rd of September.

A little about myself, I am a third generation culinary professional who as part of my classic European Training spent time in Genoa, Italy learning the beautiful flavors of Italian Cuisine.

I think that the evening should start with a chilled glass of "Prosecco" with a small plate of Baked Ravioli

Then we move to the table where I serve the meal that you have chosen.

Caprese Tart
a delicate pastry filled with buffalo mozzarella, heirloom tomatoes fresh basil baked and served with a green salad drizzled with Balsamic Glaze

Sicilian Style Shrimp and Crab Cakes
a classic sicilan dish with a modern twist, crab and shrimp cake with an heirloom tomato reduction

Plates are cleared, wine is poured and then your choice of one of the following is served.

Tuscan Stuffed Chicken
organic chicken breast stuffed with pimento, baby spinach and pimentos served with a pink vodka sauce
Asparagus Risotto
Mélange of Sautéed Squash
Or
Tenderloin with Red Wine Reduction
a center cut of tenderloin with a fragrant and peppery red wine reduction
Pan Smashed Potatoes
Pancetta Shaved Brussels Sprouts

And for the finale choose one of the desserts
