Appetizer: Pineapple strawberry baby kale salad with bell peppers, avocado, toasted coconut, goat cheese & key lime vinaigrette

Entrée: Macadamia nut crusted local whitefish with a mango ginger sauce
Coconut sweet potato mash & sautéed island vegetables

Dessert: Pineapple & brown sugar upside down cake drizzled with a coconut cream sauce (Gluten-Free)

Note: I will do a Macadamia nut, black bean, cilantro stir fry for the vegetarian's entree :)
