Mini-Reception

- Freshest Oysters with arugula pesto, mignonette sauce and lemon

- Shrimp cocktail shots with avocado, chive, cucumber and cilantro

- Salmon Blintz Rolls with cream cheese, dill and red caviar on the top

1st course

- Lobster Bisque with tarragon crème freche, brioche croutons, lobster salad and micro green

Or

- Borscht (Red Beet Soup) with heirloom carrot&beet, brioche croutons, farm sour cream, beef threads and dill

2nd course

- Tuna tartare with guacamole, chive, cucumber, seaweed, sesame seeds and secret vinaigrette
Or

- Baby Gem Salad with seasonal blanched veggies, pickled strawberry, watermelon, charred avocado dressing, pistachio and Parmesan

Main Course

- Spicy- roasted Halibut with broken rice perlau, heirloom carrot &rhubarb, carrot-ginger purée, chive, lemon vinaigrette and country ham (optional)

Or

- Fillet mignonette with mash potato, roasted seasonal vegetables, garlic confit and port wine jus

Dessert

As a compliment, I will provide a special dessert.
