Gem salad (pickled strawberry, watermelon, pistachio, Parmesan, charred avocado dressing)


3rd course

Raspberry scallop ceviche with pickled red onion, avocado, fresh chili pepper, micro cilantro, chive and chili-lime vinaigrette

Pan-seared scallops with carred eggplant purée and leeks, fried baby eggplant, buckwheat perlau, citrus segments


Main course

Spice-roasted Halibut with Carolina Golden broken rice pirlau , heirloom carrot, rhubarb, carrot purée

NY strip with mashed potato, roasted seasonal vegetables, garlic confit, port wine jus
