Freshly made burrata (cheese curd from dines farm) summer tomato jam; tomatoes preserved at their peak, simmered with shallots, garlic confit, grape seed oil, and a touch of palm sugar.
The cheese is also, served with freshly made toasted, flat bread (a recipe from ilili) seasoned with seal salt and brushed with a good olive oil.
Winter squash risotto
shallots, leeks, brown butter, ,garnished with crispy parsnip, grated Parmesan riggiano, parsley oil, served in a special dish that I will provide.

Fillet and lobster tail surf and turf
Fillet cooked sous vide and finished by roasting with black garlic, thyme and foaming butter, on top of black truffle potato gratin, and caramelized acorn squash,
The lobster is butter poached, also cooked sous vide; served with cauliflower purée, roasted cauliflower and a fricase of root vegetables. The lobster will be finished with lemon butter sauce and espellette (fermented chille’s, dried and pulverized) it’s a powder to sprinkle on top of lobster.
