sauce:
building a good stock makes a great soup.
asparagus or corn soup: I'm trying to go seasonal
jus- finishing sauce for the fillet.

vegetable components:
potato pancake, (latke) this recipe could be substituted for many other type of vegetables.

Pan frying- a technique that you'll eventually master by the end of the lesson. mainly so you have the ability to control temperature.

roasted mushrooms- my personal favorite technique to properly roast fungi.

sous vide cooking: meaning under vacuum. we can just use ziplock bags. I have the machine for the tequnique.
-fillet mignon, or veal tenderloin,
-infusing oils to use in salads and finishing dishes

baking/pastry:
cheesecake - a traditional cheese cake has a technique which you could use in many other baking recipes.
served with a graham cracker crust
