Hi Jordyn,
My name is Henry Lebard and I would be delighted to prepare a lovely Spanish-themed anniversary dinner for the two of you. I'm very excited because Paella is one of my favorite dishes to make, and I rarely get to do it for clients! We can do a Valencian style as you mentioned, or a seafood style. Of course, there are dozens of varieties of a Fideuá!
I have suggested a menu loosely based around that theme, but we have plenty of room to go over things you both particularly enjoy. We can discuss this on this platform, or after booking once contact information is able to be shared. Even after booking confirmation, we can make any and all changes you may like.
I've attached a few photos dishes I have made in the past to give you an idea of what to expect, and perhaps some ideas for dishes we have not yet thought of.
