Heirloom tomatoes, buffalo mozzarella, Genovese basil, PDO Sicilian EVOO, Balsamic reduction

Second Course
Trucha di Oregano and Rice Pilaf
Rainbow trout, sauteed in oregano and onion mirepoix, crispy carrots, wild rice and green pea pilaf

Dessert
Chef's Strawberry Shortcake
Old-country shortcakes, organic strawberries, whipped cream, sugar

My name is Henry labard and I would be delighted to prepare a lovely 50th birthday dinner for the of you. I have suggested a menu based on an Italian theme starting with a lovely and fresh cup rice a salad, followed by a tender flavorful and fresh rainbow trout with wild rice pilaf. For dessert I have suggested a lovely vanilla cognac infused tiramisu which has a terrifically velvety flavor and a subtle yet fresh espresso taste.

These are just suggestions, so I welcome any questions, requests, or thoughts from you. I want to make sure this dinner is catered to all of your tastes.
